How to remove Foie Gras from a jar like a pro?

Discover the essential tips for unmolding foie gras without spoiling it

Foie gras is an exceptional delicacy, but when it comes to taking it out of its jar, the task can sometimes seem tricky. At Relais Gourmet, we understand the importance of preserving texture and presentation. That’s why we’ve come up with five tried-and-tested tips for removing foie gras from the mold like a true professional, while respecting its refined taste and delicacy.

Tip 1: Use a hot blade for perfect demolding

For a smooth release from the mold, nothing beats the use of a knife with a thin, hot blade. Immerse the blade in hot water for a few minutes, then gently insert it all around the foie gras. This quick and easy process allows the foie gras to be easily removed from the walls of the terrine or jar, without altering its delicate texture or taste. This method is ideal for maintaining the integrity of foie gras, perfect for your sophisticated presentations.

Tip no. 2: Opt for the inverted bain-marie

Another effective method is to use an inverted bain-marie. Place the jar or terrine of foie gras in a container of cold or iced water for a few moments. This thermal shock will help the foie gras shrink slightly, making it easier to remove from the mold. Be careful not to leave foie gras in water for too long, to preserve its texture and flavor. This technique is ideal when you want to remove foie gras from the pot quickly and easily.

Tip no. 3: Leave to stand at room temperature

Before unmolding your foie gras, take it out of the fridge and let it stand at room temperature for about 20 minutes. At room temperature, foie gras softens slightly, making it easier to handle. This method is particularly recommended if you prefer a gentler, more natural approach, without the need for additional equipment.

Tip 4: Classic demolding with a round knife

The classic method for unmolding foie gras is to use a round-tipped knife. Gently run the knife around the sides of the jar or terrine to separate the foie gras. Next, use the tip of the knife to gently lift out the foie gras without breaking it. This traditional method is fast and efficient, perfect for an elegant presentation.
