Foie gras, an exceptional dish often associated with festive meals, also has little-known nutritional benefits. That’s why Relais Gourmet, an artisan of taste since 2004, invites you to discover its advantages while adopting a responsible and gourmet approach to consumption.
A delicious and beneficial alliance
Foie gras, a symbol of French gastronomy, is not just a pleasure for the taste buds. Consumed in moderation, it offers unsuspected benefits for the cardiovascular system thanks to its unique nutritional composition. Relais Gourmet explains its health benefits and reminds you of the importance of sensible consumption.
Monounsaturated fatty acids: Allies for the heart
Foie gras is rich in monounsaturated fatty acids, similar to those found in olive oil. These “good fats” play a key role in cardiovascular health:
- Increase in good cholesterol (HDL): They promote a beneficial lipid balance.
- Reduction of bad cholesterol (LDL): they limit the risk of accumulation in the arteries.
Around 60% of the lipids in foie gras fall into this category, making it a food with cardioprotective potential.

Essential vitamins and minerals
Foie gras is an excellent source of vitamins and minerals that support the cardiovascular system:
- Vitamin B9 (folic acid): Reduces accumulation of homocysteine, a substance linked to cardiovascular disease.
- Iron and selenium: These nutrients promote red blood cell production and protect cells against oxidative stress.
The “French Paradox”: a lesson in moderation
The famous French Paradox, highlighted by Professor Serge Renaud, points out that the inhabitants of south-west France, who are great fans of foie gras, have a low rate of cardiovascular disease. This phenomenon can be explained by a balanced diet rich in monounsaturated fatty acids, combined with a healthy lifestyle.
