An emblem of French gastronomy, foie gras embodies the refinement and conviviality of festive moments. Whether terrine, block or semi-cooked, it seduces with its melt-in-the-mouth texture and incomparable flavors. To preserve all its rich taste and unique texture, it is important to adopt appropriate storage methods. This article offers you the best tips for preserving your foie gras and prolonging its enjoyment.
Canned foie gras: the long-lasting solution
Canned foie gras, whether jarred or canned, is a true champion of longevity. Properly preserved, it can be kept for several years without altering its taste qualities. Store foie gras in a cool, dry place, between 10 and 15°C. Protect it from light and temperature variations. As a result, it improves with age, like a grand cru.
For example, our Natural Whole Duck Foie Gras will keep for up to 3 years at room temperature. Once opened, store in the refrigerator. Consume within 15 days for optimum freshness.
Semi-cooked foie gras: more delicate preservation
Semi-cooked foie gras is more sensitive and requires special attention. Store in the coldest part of the fridge, between 0 and 4°C. Depending on the producer’s recommendations, it can be stored for 15 days to 3 months. After opening, use within 2 to 3 days. To prevent oxidation, wrap the semi-cooked foie gras tightly in plastic film or cling film.
Terrine and block of foie gras: between tradition and practicality
Raw foie gras can be stored for up to 6 months at -18°C, while cooked foie gras retains its flavor for up to 3 months. Generally, it keeps for 2 to 3 days in the refrigerator. As for blocks of foie gras, they can be kept for 4 to 5 days. However, they must be well wrapped in plastic film or cling film.
Freezing: a solution for preserving fresh foie gras
If you’ve chosen a fresh foie gras or decided to prepare your own, freezing can be an excellent alternative for preserving its freshness. It is important to freeze foie gras quickly after purchase or preparation. To do this, place it in an airtight container. You can store raw foie gras for up to 6 months at -18°C. Cooked foie gras retains its flavor for 3 months.
